Flavor Profile
Sun-dried fig and wild plum linger on the palate, carried by a green-tea clarity that's unmistakably Simbai. Layers of cocoa powder and roasted hazelnut ground the cup with warmth, while a clean, balanced finish leaves a lasting impression of the highland terroir.
Origin & Process
Grown at 1,600–1,900 meters in the Simbai-Kabar highlands of Papua New Guinea, this single origin lot is tended by smallholder farmers who have cultivated coffee for generations. Cherries are hand-harvested and sun-dried (natural process) on raised beds, preserving the fruit character and sweetness that define this remarkable cup.
Roast Level
Available in Light or Medium roast. Light roast highlights the fruit and floral notes with a tea-like delicacy, while medium roast brings out the cocoa and hazelnut warmth for a rounder, more comforting cup.
Brewing Recommendations
This coffee shines with pour over and French press methods, which accentuate its clean, balanced character. Also excellent as cold brew for a smooth, refreshing cup.
