Roasting starts a rapid period of physical and aromatic change in coffee. By roasting after you order, we can shorten the time between roast day and your kitchen and give you more control over when you begin brewing.
Fresh does not always mean “brew immediately.” Coffee releases carbon dioxide after roasting, so the best first brew can vary by roast level and brewing method. If your bag arrives extremely fresh, giving it a little rest may improve extraction.
